@spiffiness - there's a free VNC app called Mocha VNC Lite. a more fully featured version costs $5.99 on the AppStore. the lite version chops off the screen over a certain resolution - kinda annoying. I much prefer the old vnsea.app on pre-2.0 jailbroken phones, hopefully it will be updated for 2.0

re: must-have apps - this one isn't free but it's only $4.99 and is lots of fun IMHO - it's a dice game called Motion X Poker. there's a video review of it on gizmodo, go take a look

some other free apps I like: Urbanspoon (unique restaurant finder), 1Password (password vault), NetNewsWire (RSS reader), Moonlight Mahjong Lite (multi-touch aware tile game), Box Office (movie showtimes), Stanza (great ebook reader & online catalog), Instapaper (tool to mark webpages for later reading)

I forgot to mention -- Twinkle is a great twitter client. It's free like Twitterific, and I prefer it! The gui is not so jerky and it has a nice 'tweets near me' feature which uses your location info.
