Despite GM seeds of iOS 11, watchOS 4 and tvOS 11 released today, macOS High Sierra won’t be available publicly on September 19, like the former trio of software, following a pattern we’ve seen from Apple in the past.
Apple noted today on their macOS High Sierra website the new version will launch publicly on September 25:

The delay allows for the company to tweak the GM seed, while also taking stress off download servers, since September 19 will see hundreds of millions of iOS users update to iOS 11. We’ve all been there when our iOS 11 updates run into errors. Having millions of Mac users upgrade to High Sierra on this day would not make for a good experience.
